Valley Vista Vineyard Me’thode Champenoise Sparkling Brut of Pinot Noir is hand made from 30% local Chardonnay grown just above the fog line on a chalky southern facing slope, and 70% estate grown Pinot Noir picked specifically from a southeast facing slope overlooking the Monterey Bay. Eight months en triage, hand riddled and hand disgorged, this is a labor of love with very limited production. Strawberry, lemon and beeswax accentuate mineral notes. Long hang time and slow maturity make for lush fruit forward Pinot Noir, having black cherry and raspberry notes with vanilla, spice and clove aromas. This marine influence comforts our fruit, contributing to a balanced character, including a floral nose backed with deep flavors of black cherry, cranberry and raspberry. Honoring my French heritage, this Reserve Pinot Noir is carefully crafted with characteristics of a classic Burgundy. It earns its status coming from our highest vineyard elevation, blocks 2&3, which consistently yield optimal fruit, with sugars and acid coming to maturity simultaneously. Our grapes are hand harvested, tended to immediately, and delivered to French oak barrels, aged for one year, bottled and allowed to rest, until ready for release.
